Gaza cuisine boasts the best seafood in the region due to its location on the rich fishing waters of the Mediterranean. The fish are often grilled, stuffed or fried and adapt flavours from Levant cuisine with common components such as garlic, lemon, chilli, dill seeds and lentils. Gaza has an industrious fishing industry and a growing farmed fish sector which attempts to end their reliance on Israeli imports. Under U.N law, fishing territories are permitted up to 12 nautical miles yet Palestinian fishermen are often restricted to 6 or less by Israeli military boats.
